About leave the payee name into blank

1. I cannot find the Standard Chartered Bank (Hong Kong) Limited in the selected bank section,
only HSBC, BOC and Hang Seng Bank are found. Can you help me?
2. If I would like to leave the payee name into blank, what can I do?

However, I guess in some cases, we don't know who we need to pay but we know the amount we need to pay,
therefore, when there is a blank check, she can just fill in the payee's name.
